After a presentation of organic wine growers’ practices and of the regulations, this lecture will focus on the use of indigenous fermentation, a common practice in organic growing. Research results and testimonies will also be introduced. Two additional CASDAR projects, Organic leaven and Wildwine, looked at the notions of diversities, assessment and selection of yeasts and bacteria as well as the improvement of fermentation per feedstock (pied de cuve)
