Description
Grapes are becoming increasingly sweet
and now produce more than yesterday but less than tomorrow, resulting in wines that are too
alcoholic, unbalanced, and rejected by consumers. Technical corrective measures
exist in the vineyard and the winery. To be validated,
they must respect the organoleptic quality of the wines.
